We bought a microwave today
I can't even remember how long it has been since we had a microwave in our household, it must have been at least 6 years at least. After that time, we moved several times and either had no space in the kitchen for one, or we had no money to buy one. Now I know these things don't have to cost a fortune, this one that we bought today is also a very simple and small microwave, but we just managed without one until now. Last winter, I've doubted buying one, and by the time I found we needed one, winter had passed and it became less important for some reason.
It recently became a pain again for me to constantly defrost things the evening before needing it, and on top of that, some frozen food is just not that ideal to prep or defrost in a pan or oven. I just felt that we need the possibility again to defrost stuff quickly and even more: being able to have portions of food from the day before, just heating them up for a minute or so before being able to eat. I didn't realize how much I've missed that, so convenient as during the winter, I often cook bigger portions to save myself the trouble for a few days. Preferably so that in the next weeks I have at least 1 day where I can prep a leftover portion of food.
For a few days I've been craving cake
But honestly, I don't feel like spending the time on it as I'm caught up doing other things. I realized that I could try out this microwave today and make a quick mug cake recipe. I remember making these years ago, which turned out quite nice. Ok, it doesn't replace a good old freshly baked cake in the oven, that's for sure, but it's a nice quick replacement. And it will give me a reason to try out the microwave immediately.
Ingredients
- 2 1/2 tablespoons of flour
- 2 1/2 tablespoons of sugar
- 1 tablespoon of unsweetened cocoa powder
- 1/4 teaspoon of baking powder
- pinch of salt
- 2 tablespoons of milk
- 1 teaspoon of coconut oil (or other oil, except olive oil)
- 1 small egg
- 1/2 banana in slices
You will also need a fork, mug, and microwave.
Instructions
First, add these ingredients in a microwaveable mug: flour, sugar, cocoa powder, baking powder, and salt. Now whisk them thoroughly with a fork.
Second, add the milk, coconut oil, egg and whisk until you have a smooth cake batter.
Now put the mug in the microwave, depending on your wattage, you have to add or shorten the time. I have a 700 WATT microwave, and mine was cooked for 90 seconds. For example, if you have a 1200 WATT microwave, 45 seconds should be enough as I looked it up online, and found that 45 to 60 seconds usually should be enough, but in my case, with a lower wattage, 90 seconds was needed. I tried one on 60 seconds, which turned out to be still wet on the lower bottom.
The end result
It still looks a bit wet, but trust me, it's perfect. Longer would give you a very dry cake, which is not tasty at all.
Add the sliced banana on top of your cake.
And enjoy. Of course, you could choose to add some whipped cream or sprinkles, but I personally didn't feel in a whipped cream mood. I have to admit, for a cake that only took about 5 minutes to bake, this was a nice afternoon snack!
