Hello friends. Braised snakehead fish with pepper is one of the traditional dishes of my country Vietnam. This dish is associated with the taste of my hometown, especially the southwestern provinces, where I grew up. This dish is usually served with raw cucumber and hot rice, accompanied by a hot soup is great. If you want to travel to Vietnam, I think you should try this dish, because I think this dish is quite strange to you and it is delicious traditional food that we like. So today I want to share with you this recipe for Braised Snakehead Fish. I hope you will try it one day in my country, or in your own kitchen.
For this dish, the ingredients are quite easy to find, especially in Asia. However, not everyone knows how to cook this dish so it's delicious and full of flavour without being fishy. So in this post, I will share with you how I deal with the fishy smell of fish.
The ingredients for this dish are:
- Snakehead fish: 1 fish
- Ground pepper, or raw green pepper: 10gr-20gr
-Condiments: Sugar, salt, fish sauce, scallions, vinegar, ginger.
Making:
Step 1:Clean the scales of snakehead fish, wash it with salt and white vinegar until it is no longer oily when touching the fish's skin.
Step 2: Cut the fish into 4-5 medium pieces.
Step 3:Cut the ginger into 3 thin slices. Put the pan on the stove, add cooking oil and when the oil is hot, add the ginger and fry for 1 minute, then add the fish and fry until both sides are golden, then remove. (This step is very important not to be missed because it helps to eliminate the fishy smell of the fish absolutely).
Step 4: Make caramel for the dish to add beautiful colour. Add 3 tablespoons of sugar to the hot pan, add 3 tablespoons of filtered water to the same, turn on the heat to medium, then wait for the sugar to melt and bubble, turn brown, meanwhile use chopsticks to stir until the sugar dissolves for a while. . When the sugar is brown, turn off the stove. Quickly put the fish in, stir on both sides. (At this step, please be gentle, if you are strong, the fish will be crushed, and in a loss of aesthetics, not delicious).
Step 5: After the fish has a nice brown colour, start seasoning the dish: 2 tablespoons of fish sauce, 2 tablespoons of salt evenly spread, 2 tablespoons of sugar, and half a cup of filtered water. Boil with low heat for 10-15 minutes, when the water boils and gradually dries up, turn off the heat, add green onions, and ground pepper.
