What is a curry? Wikipedia https://en.wikipedia.org/wiki/Curry says it's "a dish with a sauce seasoned with spices, mainly associated with South Asian Cuisine." There's coconut milk in this stew, and plenty of spices, so I hope it is worthy of the curry name!
Ingredients:
1 kilo chicken pieces with bones - legs, drumsticks, wings, anything is fine
4 tbsp oil
4 tbsp light soy sauce
3-4 medium tomatoes - chopped
1 large onion - sliced
10-12 cloves of garlic
1 small piece of ginger - about 2cm 3/4 inch
3 tbsp chili powder
2 tbsp ground cumin
2 tbsp chili flakes
1 tsp yellow mustard seeds
2 tbsp ground sumac
1 tbsp turmeric
1 tbsp freshly ground black pepper
2 tbsp dried celery
water
400 ml coconut milk
300 gram cauliflower florets
150 gram bell pepper - diced
Whisk the oil and soy sauce together, and brush the chicken parts all over. Make sure to get some under the skin too! Then place the chicken on a rack over a deep baking sheet with a little water in it, and grill in the oven at 250°C/480°F until the skin turns crispy. Turn and crisp the other side.
Place the chicken in a dutch oven and pour any remaining oil/soy mix over it, and add the liquid from the baking sheet. Add tomatoes, onion, garlic, the piece of ginger and all the spices.
Add water until it covers the chicken almost halfway, and cook on high until it starts boiling. Then turn the temperature down and put a lid on. Simmer for 15-25 minutes, until the chicken is almost done. How long it takes depends on the size of your chicken pieces.
Add the coconut milk and the last vegetables, stir gently, and turn up the heat. Cook without a lid until the sauce thickens a little and the cauliflower just starts to soften. Or longer if you like softer vegs, of course!
Sprinkle some roast onions on top for extra crunch, and perhaps add sri racha for a bit of extra heat and sweetness.
