In previous posts I showed you how to make coconut milk using directly this fruit, from the result of that recipe besides a delicious drink suitable for the whole family and for any health condition I also had the remains of the shredded coconut, so what do I do, easy, flour from this fruit.
Today's recipe is quite simple, the only thing we need is the grated coconut pulp. If you have already seen the recipe for coconut milk, the next step is to take the remains of the fruit, spread it on a metal tray and put it in the oven at the lowest possible heat (between 45°C and 35°C).
With the heat the coconut shreds will dry slowly, depending on your oven and the temperature the shavings will dry between 3 and 4 hours, although it is best to watch for the shreds to acquire a dry texture and a white to beige color, do not let the fruit burn.
After the drying process we take the coconut fragments already dried, we place it inside a blender or food processor and for several minutes we pulverize the coconut, it will be with the same texture of the corn flour or even finer depending on your machine.
And that's it, gluten, sugar and lactose free coconut flour, high in fiber and for the whole family.
