When in doubt? Tuna sandwich!

Dice onions & celery if you have it (and like it) add two table spoons of Mayo (and pesto if you’re feeling fancy) and spice to taste. Now, add your tuna can & mix with olive oil & lemon.

If you have an air fryer, in around 20 minutes, you can prepare a side of French fries :)

Or how about meatballs! Just mix around 1/2 pound minced meat with an egg, breadcrumbs & a splash of olive oil. Use your hands to roll the mix into balls like this & pop in the air fryer (there's even a specific meat setting).

After 10 minutes, open air fryer and take a peek. Shake your balls around (the ones in the fryer ;) & give 'em another 10 minutes before popping them into a sandwich or tomato sauce or a bowl of soup.

And, because air fryers make everything easier (and healthier and tastier) here’s a meal I prepared recently:

That’s, basically, chicken and celery in a Thai sauce over rice :) As easy as 1, 2, 3…

Really pressed for time? Sautée some veggies; I used kale, onions tomatoes - maybe, add cheese — and an egg or two. Delicious, filling & healthy, all in about 10 minutes (those home-made fries take a little longer, as you know ;)
