In the garden of the homestead we are house-sitting, I found tomatoes, who once tried to become bright red, but couldn't manage, because it was already too cold.
I was wondering, what to do with them, because it didn't feel right, to just throw them on the compost. So I researched a bit and found out, that I shouldn't eat them raw, because of the high concentration of Solanin, but I could safely and easily use them to make some nice chutney!
I didn't know much about chutney, because it's not very popular in Germany, where I come from.
It's and Indian food originally, but also quite common in the UK.
And as I understand it, one can just put any veggies and fruits together with onion and other spices, and boil it, until it's done ^^
A great way to preserve your garden crops!
And as we have an abundance of quince here in the garden, too, I decided to combine them with the green unripe tomatoes.
I read a few recipes, to get an idea how much veggies and fruits I would need, and which kind of spices are usually used.
But I' m really not good at following recipes and in the end I just improvised.
Basically I've cut all the tomatoes (that was quite a lot of work, because most of them were really tiny ^^), some quince, one onion and garlic.
Then I've put it all in a pot with a bit of water and started boiling it.
I also added some sugar, salt, pepper, ginger, and chili flakes, but you can put whatever you like.
I think I should have opened the lid of the pot a bit earlier, or maybe I had too much water in it. The chutney was still quite liquid after about one hour of boiling.
I kept boiling it for a while longer, but after some time I was tired of stirring, and I wanted it to be finished.
So I decided, that it was good enough for a first try ^^
At least it tastes quite good, sweet and fruity, as well as sour and spicy :-)
So I filled it into my sterilized jars, boiled them again for a few minutes, so I could keep the chutney in storage for a few months (if we don't eat it soon).
I don't really know yet, what to eat with the chutney. I can only think of rice maybe or simply on bread and cheese ... Do you have any ideas?
I could use some inspiration!
