I'm going to share with you the Vegan Creamy Potatoes with Peanuts and Green Veggies Recipe. You can replace peanuts with other types of peanuts you have if you don't have peanuts available.
For the sauce, I use the vegan golden curry paste.
Ingredients
- 200 grams of potatoes
- 100 ml of coconut milk
- 1/2 tablespoon of cornstarch
- Ready-to-eat stir-fried green veggies (in here I use stir-fried pakcoy / a type of Asian veggie)
- Herbs according to your taste, example: basil, bay leaves, and kaffir lime leaves
- A little Water
Golden Curry Paste Ingredients
- 3 pieces of red chili peppers
- 2 cloves of garlic
- 5 cloves of red onion or using the type of onion that you have in the kitchen or about 1/2 of a handful onion.
- 3 pieces of candlenuts
- 1 tablespoon of salt
- 1 tablespoon of turmeric powder
- 1 teaspoon of coriander powder
- 50 ml of vegetable oil
How to make
- Step 1
Dissolve half a tablespoon of cornstarch with 100 ml of coconut milk. Stir well, set aside.
- Step 2
Blend all ingredients for the golden curry paste. Then saute until fragrant. Add herbs.
- Step 3
Add the potato slices, then add a little water. Cook until the potatoes are cooked but not too mushy. You can stick the potatoes with a fork to see the texture of the potatoes.
- Step 4
Add the coconut milk mixture with cornstarch that has been diluted first.
Add peanuts too.
- Step 5
Cook, stirring occasionally, so the coconut milk doesn't break. Cook until the potatoes are cooked and soft but not overcooked.
- Step 6
Serve with the stir-fried green veggies.
NOTE: You may have no stir-fried green veggies. Then you can cook vegetables with potatoes. Add green veggies before you add coconut milk to dishes and when the potatoes are almost cooked.
Here I happened to be using stir-fried green veggies because I had them in stock beforehand. So I combine these two menus in one dish.
You can serve this meal anytime, from breakfast to dinner. I usually eat this meal at lunch or dinner.
