The specialty of Indian food is that most of the food here is basically vegan but since the consumption of milk and milk products increases after the white revolution, vegan food has also become non vegan due to the adulteration of dairy products.
There are some examples like Jalebi, which is a vegan dessert but since it is started to fry in animal fat like ghee and curd is added in batter it has become non-vegan. Similarly Khaman Dhokla is also a vegan food but curd is started to add in its batter so it also become non vegan.
Both these recipe are excellent and delicious when prepared without using any dairy product.
Today in ecoTrain Challenge I want to share a very simple but delicious traditional food of Gujarat state of India, it is known as Khaman Dhokla
Here Khaman means fermentation and Dhokla is a preparation made of different lentils.
Basically it is a recipe made by a fermented batter but now a days prepared instantly using baking powder and baking soda.
It can be prepared with rice flour or gram flour. Dhokla made with rice flour is white in colour while gram flour dhokla is yellow in colour. Both have their own distinct flavour.
Making of Khaman Dhokla
The perfect measurement of ingredients is very important in this recipe. Main ingredient of the recipe is gram flour(chickpea flour)
Ingredients required
- Gram flour 500 gm
- Sugar 40 gm
- Vegetable Oil 40 gm
- Sea Salt 16 gm
- Citric acid 16 gm
- Turmeric powder 5 gm
- Water 450 ml
- Baking powder 16 gm
Making of batter
Procedure
Batter- Mix all ingredients like gram flour, sugar, vegetable oil, salt, citric acid and water to make a smooth free flowing batter. Adjust the quantity of water as required. Give it a rest for 10 minutes before cooking. Baking soda will be added at the time of steaming.
Cooking - Khaman dhokla is cooked in steam, so we will use steamer or dhokla cooker as shown in the photo.
Cooking on steam
Grease the tray and add baking soda in the batter, mix gently and pour into the cooking tray. Cook on medium-high flame for about 20-25 minutes.
Once cooked, cool down to room temperature and cut into square pieces.👇
Now to garnish it and making flavorful and delicious a spicy water is poured over it before serving.
Ingredients required for spicy and sweet water
- Vegetable oil 40 gm
- Mustard seeds 20 gm
- Green chilly 15-20 nos( less or more depends on how spicy is chillies)
- Curry leaves(Scientific name: Murraya koenigii) 20-30 pcs
- Water 650-700 ml
- Sugar 250 gm
Procedure
Heat the oil in a pan and add mustard seeds, curry leaves, green chillies(Split and cut). Saute for a couple of minutes and add water and sugar. Bring it to a boil.
Pour this water on cooked Khaman Dhokla, it make dhokla moist and delicious.

How to serve?
It should be serve on room temperature. It must be ensure that it is soft enough to eat, if required add more water we prepared.
It can be garnished with fresh grated coconut and chopped coriander leaves.
It is also served with green mint-coriander sauce(green chutney) and sweet and sour tamarind sauce(red chutney).
It is a popular breakfast but can be served as a main course, as a side dish or as a afternoon snacks.
Why it is simple, budget and a healthy vegan meal?
- It requires only one main ingredient gram flour which is available everywhere.
- Due to very less ingredients required it is a very economical food.
- It is very easy to prepare and doesn't require any special cooking skills.
- It is a healthy and low calorie food as cooked in steam.
- Its main ingredient gram flour is a good source of carbohydrate, protein and minerals.
