This week's pasta night was all about the mushroom treatment. Thanks to all the rain, we are awash with mushrooms popping up all over the place.
The challenge? Cleaning them and getting rid of the grit. Foraged mushrooms, even in lawn, are often covered with earth, as most of these were. And misshapen. The best were reserved for another supper.
Then the bits were slowly braised with onions, garlic and white wine to bring out the glorious flavour. Finished off with fresh thyme.
Not pretty, but more than pretty darn delicious.
