Hello dear hiver friends of this community, I'm back again to share some one-of-a-kind Filipino dish here in this community.
This week, we are really on a tight budget. Here in the Philippines, sardines was a food if we are on "petsa de peligro", it means that it will be a week of waiting for our monthly salary and we need to be very smart on budgeting our food to survive the week. Since my husband is only a wage earner, I try my best to help him in a way that I'm able to budget his monthly salary. For food electricity and other bills. Lately I'm thinking of a food that is low budget but at the same time it will be enjoyed by my family.
So instead of just sardines, I add it with a twist. Pancit is a food that is very common here in the Philippines especially when there is an occasions like birthday, because it means that you want the celebrant to have a long life if you cooked this delicacy. There are so many kinds of Pancit. I choose bihon because it is very affordable.
These are the main ingredients for this simple dish. I add some chayote, tomatoes and one egg. One can of sardines will do for this recipe. You can choose any brand you want. Of course bihon for the pancit. This are the ingredients that I choose because it's the only vegetables left at our kitchen. You can add more vegetables like cabbage or carrots for a healthier version. This recipe only costs lower than 100 pesos or about 2 dollars.
Preparation time
- First, cut the chayote and tomatoes into strips. Set aside
- Beat the egg
- Soak the bihon in water for about 10 minutes.
Cooking Time
- Sautee the sardines add some mice garlic and onions.
- After 2 minutes of sautéing, add the tomatoes and cook for another 2 minutes.
- Add the strips chayote. Let it cook for another 3 minutes or until the chayote is soft. Then add the beaten eggs.
- Mix the ingredients for another minute.
- Add about 3 cups of water.
- When it was already boiling add some salt and pepper to taste.
- Then add the bihon.
- Mix the pansit for about 5-7 minutes or until the water is reduced.
Then it's done! My low-budget Pancit bihon meal with a twist, made with love for my family.
You can see how delighted my son upon seeing my simple dish. He really loves pancit.
Even though it was a low-budget meal, I still make sure that it will be delicious and healthy for my family. Nothing compares the joy that I feel when I see my family enjoying what I cooked for them.
