I have ½tuber of yam that I didn't want to waste so I decided to make a meal out of it. At first I just thought I'd boiling it to go with egg sauce, or frying it to snack on later in the day then the idea of making yam porridge stuck and do I made yam porridge. I peeled my yam and thankfully it wasn't spoilt yet, then I cut it into small pieces to cook fast.
I added a little salt and sugar, covered it up and allowed it to cook till very soft. Then I added diced onions, and pepper to it, added a cube of seasoning and washed pumpkin leave(thinly sliced) stirred it well and covered it up to cook for about 2 minutes before adding my palm oil. Leave it to simmer for a few minutes on low heat and food is ready.
Garnished it with fried egg.
