Today's meal is Tomatoe Catfish Pepper Soup, I tagged it My Mum's Recipe because it taste as good as her other delicacies when I prepared it.

Tomatoes
Tomatoes(Solanum lycopersicum) is a fruit but it's generally eaten and prepared as vegetable. Tomatoes:

Scent Leave
Scent leave also known asOcimum gratissimum, has many benefits such as:
- It aids digestion
- It can be used for stomach treatment
- It prevents tooth decay and bad breath
- It can be used to treat infection
- It can be used as food preservatives

Ingredients
Tomatoes & Pepper
Catfish
Onion
Fresh Crayfish
Scent Leave
Groundnut oil
Maggi
Pepper Soup Spice
Kitchen glory fish spice
Salt
Now we know the ingredients needed let's start cooking.
Step 1
The first thing to do is, blend your tomatoes and pepper together while you are on that, put 4 cups of water in your kettle on heat to boil.
Step 2
Put off the heat from the boiled water and allow it to cool for 5 minutes. After 5 minutes, turn half of the water into the catfish, this will help remove the slimy substance in the body of the fish.
Use a spatula to stir the fish inside the water, then pour out the water. Repeat this process again and pour in worm water for the final washing.
Step 3
Put a pot on heat, turn in a little groundnut oil into the pot, when hot add a pinch of salt, stir and pour in the onion.
Stir the onion for 10seconds before adding the blended tomatoes and pepper
I like frying my tomatoes dry, so I left it for 15minutes so the tomatoes liquid would dry up
That's how it looks when the liquid is dried out.
Step 4
Add in 2cups of water into the tomatoes, add in your Maggi, kitchen glory fish spice, pepper soup spice, fresh crayfish and a little salt to taste. Leave to cook for 5minutes before adding the catfish.
After adding the catfish, leave to cook for 5minutes before adding the scent leave
Note: After adding the scent leaves use your cooking spoon to press in the leaves, this will make it look fresh after cooking
Cover and leave to cook for another 5minutes then bring down and serve.
It can be eaten with rice, yam or what ever you may choose.
