I have decided to prepare these goodies as a part of the social initiative of our team in Pura Vida Bulgaria - gourmet food ingredients retailer.
In times of a crisis, we have decided to do our part as a working citizen of the world. We have decided to ask people to stay home for their safety by challenging them to cook and to show us what they have prepared.
We are really happy because some people with huge voices liked our social initiative and helped us spread the word and try bringing some positivity in people’s lives.
As part of the team, I have decided to also prepare a few recipes and do my part of the job by presenting two extremely easy and fast recipes - one of which is a “baby” to the other one.
The truth is that I just wanted to make chocolates with white chocolate, matcha tea, and apple but I ended up having a lot more left from the stuffing. I have decided to add some flour and bake some cookies. They surprisingly became extremely crisp, thin, and elegant. So, yes, if you ask - I am quite happy with the final result X 2.
Ingredients:
- 400 gr white chocolate
- 2 tbsp. Tahini - sesame
- 50 gr coconut butter
- 1,5 tbsp matcha tea
- 2 tbsp honey
- 1 slice of grapefruit - juice
- 1 apple - meat, grind, and squeeze
For cookies:
- 150 gr White flour
- Vegetable oil - sunflower, olive oil, coconut oil
So, there are a few steps that we have to follow in order to make those beautiful chocolates and fine biscuits!
- Mix 100 gr melted white chocolate and all of the ingredients. Stir well well until you get a homogeneous mixture. Leave it in the fridge for 10-15 minutes to chill down
- In your chocolate mold pour some of the melted white chocolate mixed with either crushed dry blueberries or some jam and some natural food DIY. In my case, I have used diamond molds so I had a top to fill in the mold itself. So I have spread it like this - if you turn down the diamonds it will look like they are mountains with a purplish-grey top. Leave the mold in the fridge for 5 minutes in order to chocolate to harden
- Carefully spread some of the mixtures in each chocolate mold with the help of a spoon. The mixture is going to be thick and flavor saturated. You can try it but without an anti-flavor, it might be a bit overwhelming for some of you.
- On top pour some more of the melted white chocolate to seal and leave in the fridge for 15 more minutes and they will be ready to consume.
For cookies:
- Add some white flour and stir really well. Add some oil and stir again. Oil your hands and form thin cookies with them. Place them directly in the tray on some baking paper
- Bake in a preheated oven for 10 minutes on each side at about 200℃.
For the presentation, I have just used some matcha and for me it was ready. Feel free to go wild and even add some fresh flowers!
