Did you know that most of the Russians traditionally do not celebrate Christmas? Instead, they have another holiday to celebrate, and it is the New Year or better say - seeing it coming at night. The tradition goes back to the 17th century and the Russian emperor Peter I. Times change but the New Year remains to be our favourite holiday.
In the Soviet Union time which I remember well, not a single festive table was complete without salad "Olivier".
Here is my recipe of this really very traditional dish to be on tables of Russian families when thay are going to see the New Year.
There original version by the French chef needs expensive ingredients but people who were not rich invented some simpler versions of it. Moreover, every woman makes it a bit different way and it may taste differently.

INGREDIENTS
3 - 4 potatoes
1 big carrot (I had small
carrots, so I took two)
4 eggs
boiled chicken meat
4 - 5 salted cucumbers
1 apple (better a sour one)
canned green peas
mayonnaise or olive oil -
to your taste
salt and pepper to taste
some onion to taste - It can be green (spring) or other onion finely chopped

Boil the potatoes and carrots unpeeled till they are ready then wash with cold water. Leave them to cool.
Take boiled chicken meat - as much as you want. I had two chicken thighs.
Many people make this salad with sausage instead of chicken meat. Sausage can be smoked or boiled or a mix of them - it depends on people's taste and money.
Cut the meat or the sausage.
Chop the salted cucumbers. You can also add some chopped fresh cucumbers, but salted ones are essential.
Chop eggs which are cool now.
Peel and chop potatoes and carrots.
I like when all ingredients are chopped into small pieces and always do that way.
Then I peel and chop half of a big apple but you can take more or less, it is up to you.
And the green peas! "Olivier" can't be called the "Olivier" without this ingredient!
All the ingredient must be put into a big bowl to make it possible to mix them properly.
Add salt and pepper to taste while stirring. Finally add some olive oil. If you make this salad with mayonnaise, it is better to salt the salad after it because mayonnaise can be salted itself.
Oh, I have forgotten to say something important! Onion, that is it! The salad will be much better if you add green onion or some finely chopped white or yellow onion. That time I had guests with a child and made my salad without onion. That is why I nearly forgot to add it to my recipe!
