First of all what we need to do is to per-boil our meat,fish and our stuck-fish (oporoko) for at least 20min to make it soft.

It has a very geart nutritional benefit it is 100% in fat and it also it also contains vitamin E, and also antioxidant called carotenoids which your body can convert to vitamin A.water leave and (ugu) pumpkins leave this is the must important ingredient used in preparing vegetable soup in this part, east Nigeria and it also has a very important nutritional value which are known to be,alkaloids, resins, hydrocyanic acid, tannins, and flavonoids powerful antioxidant which helps our immune system.

Without wasting much of our time let me take you straight to the preparation process since we have our meat fish and oporoko boiled, we will put an empty pot on fire and add 25cl of oil to it allow it get hot that will take us 3min we add our onions to it after that we add our melon seed that's (egusi) then we fry it for another 2mins, then we add our washed vegetable I washed the vegetable with enough water and salt this is to prevent sand and germs. After that we add our meat fish stock fish and the water we used to boil it and leave it for the next 5min to steam up
After 5min our vegetable soup is ready
