Dahi bhalla or Dahi Vada
Its is a popular snacks specially of Delhi. They are so fluffy, super soft that it will melt in our mouth.
Dahi means- yogurt and bhalla are deep fried lentils fritters. In lentils we used a mixture of moong dal and urad dal.
In my home this dish is specially made in festival like Holi and Diwali. So this Diwali I made Dahi Bhalla at my home for my family and enjoyed it for 2 days.š

So lets see how to make this recipe-
INGREDIENTS
.urad dal-1cup
.moong dal-½cup
.ginger-½inch
.green chili-4
.water-½cup(as needed)
.oil-for frying
.asofaedita-½tspn
.salt-to the taste
ā¢curd-1cup
ā¢green chutney-½cup
ā¢tamarind chutney-½cup
ā¢black salt-to the taste
ā¢cumin powder-1 tbspn
ā¢pomegranate-2tbspn
ā¢chat masala-½tspn
ā¢red chili powder-½tspn
METHOD
1.In a bowl take both lentils.
2.soak them for 3 hours. Not more than 4 hours.
3.now chop ginger and chilies.
4.add asofoedita and grind it into a smooth paste yet thick paste.
5.donot add more water. Add minimal amount of water.
6.Now transfer the paste into a bowl.
7.now with the help of spoon mix the batter thoroughly for 5 mins. This process is done before the frying process. The batter will be fluffy and light and it will change the color in white. This is important step to make the vadas or bhallas soft.
8.add salt and mix again.
9.now heat oil in a kadhai for frying.
11.here is one tip to make soft bhallas.
Like we have to take a bowl of water and then pour small.amount of batter into the water. If the batter float in the surface of water then your batter is perfect for soft bhallas. If not then you have to beat the batter more for 2 to 3 mins.
Here the batter floats so I can proceed my next step.
12.now slightly drop the batter into hot oil with the help of hamd or spoon. Try to make it round in shapes.
13.further fry them till they are golden brown from all the sides.
14.fry them properly in low meduim flame. Then drain them in a paper towel.
15.we can see they are cooked perfectly.
16.now in a warm water.
17.add asofaedita and salt.
18.further add all the vadas/bhallas into the warm water and let them soaked for 1 hour.
19.they will double in size. After 30 to 45 mins squeeze the vadas and transfer in a plate.
How to prepare curd and asemble dahi bada.
20.now take curd, add sugar(optional) and salt and whisk it properly.
21.Make green chutney of corriander leaves, mint leaves and salt.
22.take some Pomegranate.
23.we need some spices.
24.now take vada in a bowl.
25.add curd on the top.
26.then add green chutneynand tamarind sweet and sour chutney.
27.now sprinkle cumin powder, red chilli powder.
28.sprinkle some chat masala and blck salt.
29.further add pomegranate. You can adjust the spices according to your taste.
30.and its ready to serve!!
