Samosa!!!
I think everyone knows about Samosa. It is also famous in several countries of the world. It is loved by many.
It is so common in India that every other street corner side you will get samosa shops. The kolkata samosa's are very famous. It has very different and delicious taste that you wont find this taste in any other state of samosa. I just love the taste of West Bengal samosas.
Samosa is a king of chaats. In every party, meetups, occasions and office meetings, hot samosa will be there with a cup of tea.
Its a vegan dish and filled with spicy potato filling.
So lets start to make crispy Samosa-
INGREDIENTS
All purpose flour-1 cup
Carrom seeds-½ tspn
Salt-to the taste
Oil-2 tbspn
Water-½cup
Fennel seeds-½tbspn
Coriander seeds-½tbspn
Cumin seeds-½tbspn
Potato-5
Peas-½cup
Oil-½tbspn
Ginger-½tbspn
Greenchili-1 or 2
Cuminseeds-½tspn
Asofedita-½tspn
Garam masala-½tbspn
Dry Mango powder-½tbspn
Salt-to taste.
METHOD-
1.take all purpose flour in a platter.
2.then add salt, carrom seeds and oil.
3.mix all the ingredients well for 2 mins. Press some flour between your palm and it should not crumble and form a shape. It means oil we put is enough.
4.add little water and form a stiff dough. Dont make soft dough. Cover it and keep aside for 30 mins.
Now for potato filling
5.boil some peas and potatoes
6.peel the potatoes
7.and cut into cubes
8.now in a kadhai add some cumin seeds, fennel seeds and coriander seeds
Roast it till a nice aroma comes.
9.then crush it in mortal pestle.
Or coarsely grind it in a grinder.
10.now heat oil in a kadhai.
11.now add cumin seeds,grated ginger and green chilies and asofedita.
12 add the coarse powder which we grind earlier.
13.add the chopped potatoes.
14.mix it properly.
15.now add boiled peas and salt
16.now mash th potatoes with the help of masher. So that the spices are well combined to potatoes.
17.now sprinkle some garam masala and dry mango powder. Off the flame and keep aside. Let the filling cool down.
18.Now knead the dough and divide it into equal parts.
19.heat oil in a kadhai for frying the samosa.
20.take one dough ball and roll it in oval shape around 6 inches in daimeter.
21.then cut it into two equal parts
22.now take one part and apply water on the edge.
23.Now take the two edge and form cone as shown down in pic. Pinch the pointed ends
24.fill the samosa with potato and peas fillings. Press it and fill but dont over load it.
25 now apply water all around the cone and seal the samosa
26.make 3 to 4 samosa at a time and then deep fry it in hot oil. Fry the samosas in low heat.
After dropping the samosa You can increase the heat to meduim and stir it ocacsionally. Fry the samosas till they are golden in color.
Donot fry the samosa in high heat because they will remain uncooked inside and gets bubbles. I got bubbles in two samosas.. but after putting low heat that I wont. So keep the flame in low.
Now serve Hot Samosas with ketchup or green chutney.
