
For a cooking lover, cooking on the weekends is a real pleasure and although sometimes, we want to taste something different away from home, home cooking is always the best option.
I love to cook and I enjoy the whole process, including shopping, I like to take my time in each preparation, that's why I love the weekends, because I can do things calmly, without worrying about watching the clock to pick up my son at school or any responsibility of our busy routine.
On weekends, I like to get creative, try new recipes, experiment with food, but it all depends on my mood, budget and of course the cravings of my little one or my husband, who are my main foodies.
In recent weeks, I have decided to eat fish on Saturdays or Sundays, mainly because when it comes to fish, I prefer to go to buy them the same day, I live in an area far from the sea, so the fishmongers are few, although fortunately I have one very close to home.
This Saturday I got up around 8 am and prepared Andean arepas, these arepas are typical of my region and unlike the others are prepared with wheat flour, so its preparation takes a longer process than the corn ones, but all this is worth it, especially if we accompany it with a soft and delicious cheese, accompanied by a steaming cup of coffee to start the morning on the right foot.
Then I went shopping with my son, I already had some things at home, but I was missing some vegetables and of course the fish, this time, I found one that caught my attention, I had not heard of it, a type of catfish called paisano, freshwater, it met my main requirement, it was fresh and does not have many bones, so my son can eat with peace of mind, it turned out to be a delight.
I accompanied it with rice, a carrot salad and yucca or cassava as they call it in other countries, the fantastic thing about this is that I have yucca left for dinner, which I plan to accompany with some meat in sauce, so half the work is already done.
Once or twice a month, we leave the house and go out for some pizza or burgers, we enjoy that too, but home cooked meals will always be special.
What will Sunday have in store for me in the kitchen, perhaps, a comforting soup is the best option for a lazy afternoon. What about you, what are you planning to eat this weekend?
