Yesterday morning I found a recipe on Youtube for a chocolate cake that doesn't contain eggs and butter. I couldn't believe that a cake would work without those ingredients, so I took a shot and this beautiful brown thing came out of my oven. In this post I will explain, step by step, how you can make this vegan(!) cake at home.
All vegan chocolate cake
I can almost hear you ask how I managed to make a cake without using any eggs and butter. I asked that myself as well when I came across this baking video... The older lady in the video sounded very convincing when she said that the cake would turn out very moist, so I just had to try it out myself. I scrolled down the page and found out that she had replaced the butter with olive oil, and the eggs with baking soda and lemon juice. Easy as that. I'm not a vegan myself but the fact that it's possible to replace these dairy and animal products makes me super excited!
The ingredients
I have already revealed a little bit about the ingredients, but I will give it all away now:
- 1 1/2 cup (195 gram) all-purpose flour
- 1 cup (200 gram) sugar
- 1/4 cup (25 gram) cocoa powder
- 1 teaspoon (2 actual teaspoons) baking soda (not baking powder!)
- 1/2 teaspoon (1 actual teaspoon) salt
- 1 cup (240 ml) cold water
- 6 tablespoons (90 ml) vegetable oil
- 1 tablespoon (8 gram/15 ml) fresh lemon juice
- 1 teaspoon (2 actual teaspoons) vanilla extract
How to make
So now that you know what to buy/use for this cake, you're ready to stir, pour and bake!
- Preheat your oven to 350° F/ 177° C and grease a round cake pan.
- Put the flour, sugar , cocoa, baking soda and salt into a big bowl.
- Stir well with a spoon (no mixer needed).
- Put the water in a measuring cup and add the oil, lemon juice and vanilla extract to it.
- Stir and add the wet ingredients to the dry ones in the big bowl.
- Stir around until there are no lumps anymore.
- Pour the batter into the cake pan and bake for approximately 30 minutes. You can test with a toothpick if the cake is done. Insert the toothpick in the center of the cake, if it comes out clean, the cake is done.
- You could add glaze or frost to make it look and taste more spectacular, but I simply dusted the cake with powdered sugar (very good as well!)

See? The most easy chocolate cake to make. I can assure you that this cake won't survive very long, so you have to hide it very well if you want to eat it all yourself. But of course, it's way more fun to share with your loved ones, accompanied by a good cup of coffee or tea. Enjoy!
