If you attended school in the 90s in India, bread rolls would have been a staple of any school canteen. I remember my childhood, we would run to the canteen during our recess in between class periods. I used to love bread rolls so much that my mom got worried about me getting sick from eating outside food. She started making them at home. We as a household over a period of time got pretty good at making them.
Today i am going to show how how to cook up a tasty and indulgent snack in minutes from simple ingredients you have in your kitchen. It does not matter which culture you belong, this is one item that will resonate with everyone.
While it's an easy recipe to cook, let me warn you. This is a recipe for the taste buds. It's very high in calories. It's a great lazy Saturday or Sunday evening snack. It goes well with drinks and can be an occasional snack for kids.
Methods like baking and air frying can be done to reduce the calorie count, however they don't work very well with this recipe. So even though i am all for healthy recipes for this one i will recommend deep frying.
While i have made a potato based filling one can also use lots of veggies if you want this to be a little healthier. Cottage cheese / tofu can also be used. In case your diet involves meat and eggs you can use grated (keema) chicken or you can mash the boiled eggs with the potatoes..
So let's get this sinful treat made.
Ingredients : Serves 2 (4 Bread rolls)
Stuffing
2 medium size potatoes
1/2 tsp salt
Water as needed.
1 medium onion finely chopped
1/2 cup chopped coriander/cilantro leaves
1 green chilli - finely chopped
1/8 tsp crushed black pepper
1/4 tsp red chilli powder
1/4 tsp garam masala powder or add as required
1/8 tsp cumin powder
Salt to taste
1/4 tsp Aamchur powder / Dry mango powder or pomegranate seeds powder /
1 tsp Lemon Juice/Tamarind Pulp Juice (In case you Don't have Aamchur or pomegranate powder)
Covering
4 bread slices – White bread is best since it holds well. However you can also use wheat or multi-grain bread.
Or alternatively if you want an easier method.
1 cup Rice flour
1/2 cup water.
The Recipe
Stuffing
Heat some oil and fry the onions till they become translucent.
Boil the potatoes. Peel and mash them. Don't mash too much. Leave some texture.
Add the fried onions, chopped coriander leaves and green chilli.
Add all the spices. Add lemon juice/pulp if you are using it.
Add salt as per taste.
Mix very well.
Check the taste and make modifications as per your taste.
Roll the mixture into circular balls. The amount will depend on the size of the bread slices.
Bread Roll with Bread slice (Original Crispy Version)
Take the bread slices and cut off the edges.
Gently dab the slice in water for a few secs to ensure its wet. DO NOT overdo this.
Put a potato mixture ball in the slice and gently roll the slice around the stuffing.
Make sure the bread slice covers it well and there are no exposed potato stuffing. If the oil leaks in while frying, it will spoil the bread roll.
Heat a deep pan with enough oil to completely submerge the roll. Heat the oil.
Gently put the bread roll into the oil. Wait till it fries well.
Tap it around a bit in the oil to make sure it fries well on all sides. Be careful not to open the roll while in the oil.
Take it out when it's fried nicely. Drop into a plate lines with tissue paper. This will absorb extra oil.
Serve with chips and dips of your choice.
Bread roll with Rice Flour. This is an easy method for newcomers.
Mix some rice flour in some water. The mixture should be viscous like dosa/pancake better.
Dip the potato ball into the rice flour.
Heat a deep pan with enough oil to completely submerge the roll. Heat the oil.
Gently put the bread roll into the oil. Wait till it fries well.
Tap it around a bit in the oil to make sure it fries well on all sides. Be careful not to open the roll while in the oil.
Take it out when it's fried nicely. Drop into a plate lined with tissue paper. This will absorb the extra oil.
Serve with chips and dips of your choice.
There the tasty bread roll is ready. There is not much to say about this dish except that its an absolute indulgence. It's very tasty but its best if the dish is prepared once in a while .It's sinfully rich.
