Dinner is always interesting to prepare. There are many inspirations for dinner dishes that are worth trying and adjusting to taste. But one thing most importantly, I always try recipes that are easy to make also with ingredients that I can easily get supplies.
Plant-based ingredients are also the right choice because, in the area where I live, they are much easier to find. So I was excited to mix and match side dishes for dinner.
The dish idea for this meal is roasted pumpkin. In fact, I've often made roasted pumpkin when I don't have sweet potatoes on hand. This time I served roasted pumpkin with stir-fried mustard green and tempeh.
So, let's get started!
Ingredients
The ingredients we need to prepare are pumpkin, your favorite green vegetable, and tempeh.
For the pumpkin, you can use the type of squash available in the area where you live.
For green vegetables, choose green vegetables that are suitable for sauteing with tempeh. You can choose spinach, watercress, spinach, pakcoy/bakchoy, or mustard greens like mine.
Then also prepare some red chilies. The amount is adjusted to the level of spiciness you want. You also replace the chili with paprika. Also prepare onion and garlic, as well as salt.
For the roasted pumpkin, use cinnamon powder and vegetable oil. Here I use coconut oil.
How To Make
Step 1
The first step that we prepare is a pumpkin. Wash the pumpkin, but we don't need to peel the pumpkin.
Cut the pumpkin according to your taste. We can be cut like fries, potato wedges, or cut like the shape I made.
I cut the pumpkin in the shape of the pumpkin's round shape, but the thickness is not too thin, not too thick to make it easy to cook, but also not easy to burn.
Well, don't forget to preheat the oven at 180 degrees Celsius while we prepare the pumpkin for baking.
Step 2
After preparing the pumpkin, then make a mixture of ground cinnamon and vegetable oil.
Use about 2 tablespoons of ground cinnamon. Do not overdo it because it will create a bitter taste.
Step 3
Dip the pumpkin pieces in the oil and ground cinnamon mixture. Wait at least 3-5 minutes.
Step 4
Roast the pumpkin for 50 minutes, 25 minutes per side, and don't forget to flip the pumpkin. Roast at a temperature of 185 degrees Celsius.
Step 5
While waiting for the pumpkin to cook, then prepare the ingredients for the stir-fried veggies with tempeh.
Stir fry onion, garlic, and chili first until fragrant. Add salt to taste.
