Yo amo el cilantro y hace algún tiempo había guardado está receta y como es tan fácil de preparar la hice hoy. Ya que normalmente los domingos no hay ganas de cocinar algo tan elaborado y pues hice este pesto que sin lugar a dudas es delicioso, yo lo servi con pasta pero también sirve para colocar en nuestros sandwiches. Ingredientes: - 100 gr de cilantro. - 50 gr de maní. - 2 dientes de ajo. - 120 ml de aceite. - sal al gusto. - una pizca de pimienta negra. - zumo de medio limón. Para hacer el pesto yo use maní, que antes de lucuarlo decidí pasarlo un poco por el fuego y siento que esto le dará una textura un poco más cremosa al pesto. Yo use maní que era lo que tenía en casa pero también podemos usar nueces o piñones. El fruto seco que ustedes tengan en casa. Ahora vamos a agregar el aceite, puede ser aceite de oliva en este caso yo use aceite de soya que era el que tenía en casa, primero agregue una parte del aceite y luego fui agregando un poco más mientras iba licuando el pesto. Y este es el resultado final, un delicioso pesto de cilantro que a mí particularmente me encantó, en caso de que tengas queso parmesano vegano lo puedes agregar y estoy segura que le dará un plus maravilloso al pesto.
