We are busy celebrating 17 May tomorrow the Norwegian National Day had a busy day at work and after work to help some organizations. I had a very short time for making dinner. Here I made a one-pot dinner. we called it masala Bhat/(South Indian name) spiced rice with vegetables, Take only 45 minutes to prepare it. And no need to have side dishes only enough with some pickles or papadum.
The spiced rice with vegetables.
Ingredients:
2 cup basmati rice
1/3 cup frozen green peas
1/2 cup cooked brown chickpeas
2 tomatoes
1 big potato
1 red onion and 1 white onion
1 carrot
2 small bay leaves, 1 small star anise, 2 cardamoms
2 branches of mint
3 branches of cilantro
2 tbsp cooking oil
3 cm fresh ginger
some green beans
1 tbsp cashew
1 tbsp raisins
1tsp coriander powder, 1 tsp Kashmiri chili powder, 1.5 tsp salt, 1 tsp turmeric, 1/2 tsp cumin powder, and 1 tsp garam masala.

Wash and soak rice. after 20 minutes drain and discard the water Cut all vegetables into the cubes cut green beans, chop ginger and cilantro, and mint.
In a frying pan, heat the oil add whole spices add ginger and onion stir it 2 minutes add tomatoes and potato and carrot stir it. 2 minutes.
Add 1 tsp chili powder, 1 tsp turmeric, 1 tsp coriander powder, 1/2 tsp cumin powder, and 1 tsp garam masala. stir into vegetables. Add soaked and drained rice and saute it for around 4 minutes until it gets slightly roasted.
Now add green beans, green peas, brown chickpeas, cashews, and raisins, and stir again. add salt and cilantro, mint, and stir it around for 2-3 minutes on low heat lightly without breaking or burning rice add 4 cups of water. it is better to use boiling water because it keeps the rice nicely separated and take short time for cooking. ( in 10-12 minutes)
