Good day Vegans, Foodies and Hivers!
For today, I am sharing a quick and easy Stir-fried Rice which is nothing fancy but a real delish dish when you have leftovers, particularly rice from the day before. . It's when I have so many things to do around the house (stress, stress, lol!) and do not have so much time to cook. I gathered all the rest of the veggies today that were left uncooked from last time´s food shopping. If you know the lingo “wishi-washi” this is the word to describe my cooking…no formal instructions to follow, just let your imagination flow and spice your food…
I don't really make a list of ingredients I need when I do food shopping because most of the spices are already in my pantry, particularly the basic ones. The stay-in spices in my pantry are those that I use when I cook everyday. Soy sauce is a very important ingredient that I store all the time. I use soy sauce in most of my recipes. Whether it's the meat I want to marinate or spice my Stir Fry veggies during cooking, yes, siree... this is my universal liquid spice!
Note:
Before cooking, wash, peel, slice your veggies according to size as seen in the image above. This will ease your quick cooking. Here, I also used-up my fresh tomatoes. When all veggies are prepared, you are halfway done with cooking this.
Stir-Fried Rice ala Mers
Ingredients
Leftover rice from the day before
all old veggies available from your fridge for example:
spring onions, zucchini, carrots, bell pepper, spinach,
tomagtoes
3 cloves garlic, crushed
soy sauce
salt
pepper
olive oil or vegetable oil
1... In a hot pan with 2 tablespoons olive oil, simply toss the crushed garlic, stir until golden brown in color. Add the carrots occasionally stirring until soft for about 2 minutes. Add all other vegetables and a bit of the spinach. Mix and sprnkle with 1 tablespoon soy sauce. Stir all the time until soy sauce is well blended with the veggies.
2... When all veggies have become soft, add the old rice and a bit of the red onions , sprinkle 1 tablespoon and stir -fry until all are well blended... then add more of the baby spinach, mix and spice with salt and pepper according to your taste preference.
