Sengkulur Cake
Steamed grated coconut Sweet Potato Cake or what is often known as Sengkulur cake is a dish made from sweet potato and grated coconut, both of which are the right combination with a mixture of a little adhesive tapioca flour. The legit taste and distinctive aroma of this dish are always liked by many people. Apart from that, this cake is also often sold as a traditional snack that is healthy and has a taste that is right on the tongue.
Steamed sweet potatoes are always tempting, every time you see purple sweet potatoes being sold in the market, your heart is always moved to buy them. Well, I am a lover of any type of tubers, I like all types of tubers without being processed into any dish. For example, just plain boiled using salt, I like it, and it always tempts me, sometimes it even becomes my snack during the day and at night. As you know, sweet tubers are very much found in my area, because the harvest is abundant in the highlands so the selling price is very cheap, in my area alone the price per kilogram is only around IDR.8000 to IDR.10,000 per kilogram. And sometimes when there are many harvest seasons the price only reaches IDR.6000.
Materials Used
1 sweet potato size 200 grams
500 grams of grated coconut
10 tablespoons of tapioca flour
1 teaspoon vanilla powder
10 tablespoons of sugar
½ teaspoon salt
Pan size 20 cm
Cooking Steps
Step 1
I start by cutting the sweet potato, then I rinse it so the sap doesn't remain on the tuber, then I continue steaming the sweet potato until it's tender.
Step 2
Then after it's cooked, I wait for it to cool, and mash it using a fork or any easy tool, now for smoothing it's quite rough.
Step 3
Next, I added the tapioca starch and mixed it thoroughly, then added the vanilla powder.
Step 4
After stirring I also added a teaspoon of salt, and continued adding the grated coconut.
Step 5
Then followed by the addition of sugar and after everything is complete, I stir or knead until everything is thoroughly mixed.
Step 6
After everything is mixed, put it in the tin, flatten it in the tin and don't press it so that the texture of the cake isn't hard.
Step 7
Then steam for up to 40 minutes, and cover the steamer with a layer of cloth, so that moisture does not fall on the surface of the cake. Now, after it's cooked, wait until the hot steam reduces and remove it from the mold.
Result
Sengkulur cake is ready to be enjoyed, served while warm with a glass of vegan hot milk, you will definitely be very excited. This cake is perfectly textured, soft, chewy and delicious from grated coconut. the aroma of sweet potato and coconut and vanilla really compelled me to finish a few slices of cake in an instant. This is a paradise for traditional snacks that are very delicious in my opinion. Never could imagine being able to make delicious dishes from simple and easy ingredients.
