Vegan Corn Fried Rice
Corn fried rice is a dinner treat for my mother and me. I prepared this after my daily activities outside the house. My mother didn't cook anything that can be enjoyed today. As a result, making a dish with leftover rice that was cooked this afternoon became an idea this time. It's simple and easy to make, making this dish quicker to prepare on busy days. Actually, leftover rice like this is often not used anymore especially when it's cold. Everyone at home is reluctant to eat it.But if we process it into something delicious food, it will definitely be very useful, right?
Actually like the title you read, this dish is the first time I made it. I haven't seen my mother or even in my local restaurant prepare corn fried rice as a dish. So that's why the curiosity to try this recipe is a good inspiration for dinner. Besides, I will be very happy if this is delicious, I will share it with you here.
Ingredients
1 head of pakcoy vegetable
1 piece of corn
1 green onion
1 red onion
1 clove under white
1 tomato
5 bird's eye chilies
To taste ground pepper
1 spoon of butter
Cooking Procedure
Step 1
Clean the corn, and cut vegetables up to tomatoes and chilies.
Step 2
Melt the butter in a frying pan, wait until the butter is melted and hot.
Step 3
Sauté the chopped shallots and garlic golden brown.
Step 4
Then add the corn and stir-fry until the corn is completely cooked.
Step 5
Add chopped tomatoes and spring onions, sauté briefly.
Step 6
Add the pakcoy vegetables until wilted, then add a tablespoon of sweet soy sauce.
Step 7
Add ground pepper then add rice as well.
Step 8
Stir until smooth, then add salt and don't forget to correct the taste. Now for the process of cooking fried rice, I cook it for about 15 minutes while stirring it.
Serving Suggestions
Vegan corn fried rice is ready to be served on your favorite serving plate. Add the chopped tomatoes and also the pickled shallots. After preparing it, I immediately enjoyed this fried rice with my mother at home. He actually doesn't like food that he rarely eats. He wasn't the least bit sure of the outcome of the fried rice's taste, "oh this is so doubtful". I just smiled and said try it first so you can determine the taste.
The first bite was amazing, he said it was very delicious, he had never tried corn fried rice like this.
The taste is delicious, it fits perfectly on the tongue even my mother and I can finish it in an instant.
