The classic boh gadong coconut milk soup is one of the traditional gulai recipes from the deep region of Aceh. It is a very authentic vegan gravy that has a variety of ingredients that are processed from it.
One of the most popular gravies of its time, this gravies is made from coconut milk with a simple selection of spices. No oil using coconut milk makes this dish special.
Well this time it's different from the usual coconut milk soup that I usually make. Today where the soup coconut milk sauce becomes very special and only existed when my mother was a child, namely kuah Santan boh gadung. Or in the meaning of gadung sweet potato curry, this gadung fruit itself is a natural product that is easily found in our area so that a lot of dishes can be processed from it including the sauce that I want to prepare.
This recipe is from my mother, she told a little story about this soup, where in the past this soup was a favorite dish when there was a death event, usually guests were treated to this boh gadong coconut milk soup. But over time, this soup seems to not be much of a fan anymore, maybe the color is very classic and the taste can only be enjoyed by people like my mother.
My mother missed this soup so much that she asked me to make a little of it. Since we have gadung fruit from yesterday's harvest, I immediately processed it.
Materials Used
Main ingredients
100 grams white gadung tubers
10 melinjo leaves
400 ml coconut milk
Ground spices
2 cloves shallot
2 cloves shallot
5 cayenne pepper
3 cm turmeric
1 spoon coriander
6 sunti acid fruit
Now you need to know that gadung fruit has 2 color variants, namely white gadung and purple gadung. If yesterday I made sticky rice porridge with purple gadung fruit, this time I made soup with white gadung fruit. Now to make soup from gadung tubers you have to boil it first so that it does not come out excessive mucus when cooked in spices.For the green vegetables, you can skip it, because my mom said that the original recipe only relies on gadung tubers without any added vegetables. Except for the usual green chilies cut lengthwise to complete the soup dish.
Making Procedure
Cut the cubes of gadung tubers, then add salt and boil in a cooking pot.
Boil until half cooked, then cut small melinjo leaves finely. Now when cooking this, my mother also boiled the gadung tubers for direct consumption.
Prepare the spices, then grind with a little water until completely smooth.
Then add the umbi gadung that has been boiled with melinjo leaves then add spices.

Add enough water and then cook all add fresh coconut milk.
Cook until boiling and cooked, then don't forget to add salt and correct the taste.
Results
Authentic soup coconut milk is ready to serve, we usually enjoy and serve it with warm white rice with fried tempeh or tofu. Enjoyed in the afternoon during lunch is very delicious. Believe me this is my mother's favorite, she is very happy when this soup is cooked immediately enjoy it.
