There is no autumn season without pumpkin soup 🍁🍂

In case you haven't, try out this simple recipe!
However, it would produce quite a lot of soup (3-4 portions) so feel free to reduce ingredients in accordance to your needs 😀
You will need:
- 3 carrots (300g.)
- About 500g pumpkin with no peel (I weighed frozen pumpkin)
- 4-5 garlic cloves (or more 😏)
- Half of red onion
- 1,5 cubes of vegetable broth
- 1 teaspoon sweet pepper powder
- A small handful of basil (fresh or frozen)
- 1,5 teaspoon of curry powder
- 1 teaspoon turmeric powder
- Some parsley
- Optional: pumpkin seeds or cream for decoration
Preparation:
- Chop carrots and pumpkin into small pieces and boil until they are soft (around 25min.). The water should only flood the vegetables (so that the soup would be thick - if you pour too much water just remove some after boiling).
- Cook chopped garlic and onion in a stove with some oil.
- Add cooked garlic, onion and all spices to the boiled pumpkin and carrots and blend everything together with a mixer (I find hand blender the most convenient).
