There is no need to bake anything in this recipe, and the ingredients are very simple (and there is only few of them 🙈) - so it may be a good option when you want to prepare a simple but delicious gift for someone (or yourself ❤️), and not have much time. If you want the candies to be more firm, you can add coconut flour, almond flour, more chopped nuts, or anything else you already have in your kitchen cabinets.
You will need (for ~18 candies):
- 70 g. cashews (soak in hot water for at least 1 hour or overnight)
- 80 g. coconut cream
- 85 ml. maple syrup
- 54 ml. coconut oil (melted)
- 95 g. shredded coconut (also extra 40 g. for outside layer)
- 18 almonds
Preparation:
Blend cashews with a hand blender (or other device) until smooth mixture. Add coconut cream, maple syrup, melted coconut oil and coconut flakes (95 g.) and mix or blend again. Put the mixture in the refrigerator for 30 minutes.
After removing from the refrigerator, take a tablespoon of the mixture, put an almond in the middle, squeeze into a ball and roll in coconut flakes. The dough may be quite soft, but it will harden a little when left in the fridge.
Place the balls on baking paper and refrigerate for 1 hour. Afterwards, store the sweets in the refrigerator as well.
It is actually very similar to the real "raffaello" sweets for me and it doesn't require that much preparation 🍭
