This new brand challenge on Plant Power Community is "Beautiful Breakfasts".
Talking about my daily breakfast for a person who is extremely busy during the working day like me, it's all about coffee with milk. YES! I generally only eat breakfast during the weekend. I know it’s probably not a good idea but I’ve gotten used to it.
And what do I eat for breakfast during my weekend? A typical Thai breakfast is no different from what might be eaten for lunch or dinner. It can be anything that we also eat at lunch and dinner.
So my beautiful breakfast today is Vegan fried rice. I always cook large portions of rice regularly during the week. It means there is always some rice left in our refrigerators and so perfect to cook for breakfast the next morning.
Leftover rice becomes a delicious breakfast in 10 minutes with plant-based and fresh vegetables making it super healthy too. It’s packed with fiber, antioxidants, and multivitamins from all of the fresh ingredients. It's such a good meal to start my day on the wonderful weekend, isn't it?
My Vegan fried rice starts with my favorite soy proteins plant-based. Of course, it's laying down on my fridge for about a week. 😅
These plant-based made with soybeans, konjac, gluten flour, seaweed, and other ingredients. They were flavored like a ham steak. The first thing I do is dice the ham plant-based in the small cube and fry them over medium heat for about 5 minutes until it's slight char and smoke crispy perfection.
Next comes a bowl of leftover rice and stir fry with onions, garlic, cherry tomatoes, carrots, and Chinese broccoli. Then toss with soy sauce, mushroom vegetable sauce, and a pinch of sugar. Lastly, garnish with coriander and slices of chili.

Before we start cooking, Let's have a look in my garden first. So probably there are some vegetables that I can use as the ingredients for today. Fortunately, I currently have some fresh chili and calamansi in my garden. Let's harvest some!!!
Vegan Fried Rice Recipe
- 2 Cup Steam Jasmine Rice
- 1 Ham Steak Plant-Based
- 1 Tablespoon Vegetable oil
- 10 Chinese Broccoli
- 1/3 Cherry Tomato
- 1 onion
- 5 Cloves Garlic
- 1 Tablespoon Soy Sauce
- 1 Tablespoon Mushroom Vegetable Sauce
- 5 Chili
- A Few Coriander for Garnish
How to make Vegan Fried Rice
STEP 1
Here are a few important things to get right for this Vegan fried rice. Firstly cube and dice cut the ham plant-based and Chinese broccoli into square pieces of equal size to get the full flavor in one bite snap.
STEP 2
Pour vegetable oil into a wok and place over high heat. When oil is hot, carefully add the cube of ham plant-based one by one to a wok. And let it brown on all sides until golden brown.
Carefully use an iron spatula to separate the cube of ham plant-based pieces while they're sizzling and need to keep the oil at a high smoke point to avoid them sticking with the wok. When all pieces turn crispy brown then flip them to another side.
This ham plant-based can not be eaten right out of the refrigerator or reheated. The best way to bring their flavor is to deep-fried them before cooking them with another ingredient. When the ham plant-based is done. They should be a transparent color from creamy pink to darker pink, then transfer them from a wok and set them aside.
STEP 3
Heat the oil in the same wok and add garlic to a wok over medium heat and stir until the smallest pieces of garlic start to turn golden until it releases its aroma. Then add the cubed carrots and stir fry to cook about 50% over about 3 minutes and continuously whisk them together.
Turn the heat up to high with a smoke point. This prevents rice from sticking and soggy. Then add the rice and stir-fry for about 4-5 minutes to let the rice burnt and get the smoke flavor.
Once the rice is slightly burnt, add the ham plant-based and continue tossing for about 2 minutes to heat through all ingredients. Once let the rice sit without stirring so it'll develop more flavor.
Once the rice is dry and some of the grains are toasted. Then lower the heat and add the soy sauce, mushroom sauce, and sugar.
As soon as drop the seasoning to flavor the fried rice and heat to high again, then toss quickly to distribute the sauce evenly.
Once all the ingredients are mixed and gently add the onions, cherry tomatoes, and Chinese Kale.
Then stir them rapidly and carefully to avoid smashing or breaking the rice and thoroughly mix everything.
STEP 4
Once all ingredients are cooked, then turn off the heat and toss in fresh coriander, calamansi wedge and sprinkle of chili to maximize the flavor.
Our beautiful breakfast vegan fried rice recipe can be cooked in 10 minutes and perfectly for 2 hungry persons or can be stored in a closed container in the fridge for about 5 days and is possible to reheat in the microwave until warm throughout.
