Fried ripe plantain with great veggies is an amazing tasty dish that is perfect for a side dish or a whole meal and perfect for all plantain lovers
I learnt how to prepare this dish during my school days from my teacher.
The first time I made it at home by myself, my brother ate a whole bowl and promise to give me money to prepare it the second time but I didn't remind him of his promise.
This dish is packed with great nutrients because of the veggies in it and I love it with passion.
This particular bowl was consumed by my husband and guess what?
He loves it!
and I guess is because he loves fried ripe plantains just like I do.
ThIs is an easy to make meal which can be consumed as a main meal or side meal for white rice and stew and beans pudding but if am asked , I will prefer beans pudding .
Let's move straight to the needed ingredients .....
Needed ingredients
3 fingers of ripe plantain
1full cup of sliced cabbage
Half cup of grean peas
5pieces of carrots
Fresh pepper according to your taste buds
1 cup of Groundnut oil
1meduim sized onions
Salt to taste
The vegetables involved can be substituted for any other vegetables that is a available to you and more veggies can also be included , the choice is yours to make.
Duration
Like I said before, this is an easy meal which doesn't consume time, it is best served as a side dish,
It's duration is about 5minutes or highest 7minutes.
That being said, it is perfect for everyone both a working class mom who doesn't have much time or a sit at home mom or dad.
How to make
Step 1
Wash your ripe plantain using a salt and a clean water , remove the peel , cut into cubes and set aside in a clean bowl or clean plate.
Step 2
Cut your washed carrots, fresh pepper, onions, green peas and set aside
Step 3
Pour your groundnut oil in a clean heated pot and allow for some seconds then add your cubed ripe plantains and fry till it's golden brown, remove from heat and set aside in a clean bowl.
Step 4
In another clean pot , add a little quantity of Groundnut oil for frying your veggies,
Add your onions, carrot, green peas and stir for some time, then add your cabbage and stir thoroughly or until everything is well combined.
Step 5
Add the fried plantain to the fried veggies and combine it thoroughly, remove from heat and serve.
