Nice and mouth-watering color from Blue Pea Flowers Pudding With Longan Fruits. Basically, this is an Asian-friendly ingredient recipe because I'm using Blue Pea Flowers and Longan Fruits.
Longan fruit is a type of fruit that similar to lychee but with different outside skin shells. Longan fruits made this pudding more beautiful with a unique texture on the surface of the pudding.
I will share with you a simple way of plating the pudding. This can also be applied to other types of desserts. Of course, this method of plating can add artistic value to food or increase appetite with bright colors.

PREAPARING SAUCE
I don't have any fruit jam in stock. So I had to manually make the sauce for plating. So if you have fruit jam, you can use the jam straight away. Or you can adjust the texture by adding water or milk.
Here I am making strawberry sauce. I made this by cooking a mixture of cornflour with coconut milk and strawberry syrup. The result is a pink sauce that is soft and beautiful in color.
The thing that must be considered in making the sauce for the plating dessert is that you have to make a color that is not the same as the base color of the main dessert. It is to enliven the color of the dish on the serving plate.
SMALL DETAILS
For dessert plating, which is generally used for detail as the plating is ice cream or crumbs.
To be honest I don't like using ice cream on the plating as it will melt quickly and spoil the initial shape that is created on the plate.
So I prefer crumbs biscuits. Crush the biscuits to create finely textured crumbs.
For the record, use fresh or recently used biscuits so that they still smell good and taste good.
PLATING PROCESS
STEP 1
Put a glass on a plating plate. Then add the sauce to the edge of the glass.
Without glass or round mold, the sauce will look messy. Or it doesn't matter at all if you have good hand gestures to shape the sauce.

The reason I use Longan is the same as the fruit I use in the pudding so that the overall taste of the dish will remain mixed and match.
So, be careful when you choose fruit for garnish. Don't let the fruit for the garnish spoil the overall taste of the dish.
