I'm so happy to see many of you are subscribing to this new & small community! I hope all future posts in here would be useful for everyone! We all are looking up for ways on how to keep our children healthy cause if there's no health (and family), there's nothing!
As a parent, I always try to keep an eye on what my child is eating and which are his eating habits and preferences. I try to incorporate more healthy foods in his diet. Sometimes he loves what I cook, sometimes he doesn't. But that's ok, I'm happy if he, at least, try the food in his plate and then decides if he wants it or not.
I didn’t give sugar or sweets to my kid until the age of two and a half. I mean not even one thing besides healthy homemade desserts and snacks like banana bread, oatmeal cookies, fruit smoothie, fruit cakes etc. He won't receive sweets from me, not even now, not those from stores like Kinder, M & Ms, Nestle, Bounty etc etc etc etc etc.
There were a few times though when he got something sweet from the store like biscuits, ice cream or waffles, chocolate, desserts etc. A few times AND It was enough for him to become obsessed with sweets, the ones you buy. So NO! I realized it was a huge mistake I have ever made. Now he knows that sweet addicting taste from the sweets and sometimes he would reject my homemade cookies or whatever. He wants that type of sweets! The chocolate, the cereals etc!
I only buy healthy cookies, biscuits, bars for him! I always did and I will. And I regret he had just a few times those unhealthy sweets cause It just ruined everything I worked on.
Do you know what I chose to give him those unhealthy sweets? Even though it was just a couple of times? I'll tell you why.
It was because of the pressure I was hearing around me. Why don't you let him taste this cake? Why do you take his happiness to be like other children? Do you want that all the other kind have candy and let him sit and watch?
And I was a bit overwhelmed. I thought maybe I was exaggerating. So I allowed him a few times to taste those foods with a lot of sugar, very satisfying for the taste buds. And that was it! So, that was it.
So parents, I encourage you not to give sugar and sweets to the children. Don't worry, they have plenty of time to taste those unhealthy sweets that makes everyone happy. If you start earlier giving them that, the chances that they'll eat healthy foods too, decrease. A lot!
I started to do bakery goods, healthy snacks and desserts at home since my son was the age he could munch of foods. Plus, even before that, when he wasnt even born. I always tried keep an eye on my own health and cook healthy.
I am not a vegan, vegetarian or something. I just try to keep a balance into our lifestyle, our eating habits and the food we have.
Sometimes my recipes are gluten free, egg free, dairy free. They are always sugar free. I use healthy alterantives for sweetener, like honey, stevia or fruits.
I try to use as little I can.
I try to incorporate healthy foods within the recipes to have culinary diversity. I try to not exaggerate and there are still ocassions when my son is having something sweet like a birthday cake, a homemade pie or something like that.
But overall, I must know that he's not fully on those foods. Not even close.
With that being said, here's the recipe for today!
My son adores all sort of banana bread or carrot bread, with different fruits or flours.
Carrot Banana Bread
Ingredients:
Dry ingredients
- 1 cup all-purpose flour
- 1 cup coconut flour (oat floar is the best though)
- one pinch of salt
- spices like cinnamon and nutmeg (according to your taste) but I put 2 TBsp cinnamon and 1/4 cup nutmeg
- 2 tsp baking powder
Wet ingredients:
- 2 ripe bananas (mashed)
- 2 carrots (large) peeled and shredeed
- 2 eggs (bitten)
- 1/4 cup coconut oil
- 1/4 cup yoghurt
- 1/2 cup honey or fruit jam ( I used blueberry jam I had in my fridge from long time ago)
- vanilla (optional)
- nuts (optional) I would have used some but I'm still freaking out about chocking hazzards
Instructions
Preheat oven to 350°F (180°C). Grease a 9x5 loaf pan with cooking spray or simply use baking paper.
Prepare carrots (shredded) and bananas (mashed).
In a large bowl, whisk together all dry ingredients.
In a separate bowl, stir together all the wet ingredients: eggs, banana, yogurt, coconut oil, vanilla, honey(jam) and carrots.
Add wet ingredients to the flour mixture and stir until evenly moistened. Fold in the walnuts if you chose to use them in the recipe.
Pour the batter into prepared loaf pan and bake for 55-60 minutes, or until bread is springy to the touch and lightly browned.
I added a touch of cinnamon on top and some maple syrup.
After its done, let bread cool for a bit 15-20 minutes in pan and then remove from pan and place on a rack to cool completely.
My 3 yrs old was really excited about the bread. You can see in the photos below that he couldn't keep his hands out of the counter.
You can serve it along a glass of milk or a tea.
You can slice it and then keep it in the fridge. You can also freeze some slices.
