Spring is here already (for many of us 🙈🤔) and that means fresh greens and veggies! 🍃💚
But what nature's really got for us in the season are these nettles and wild garlic. And I found a way to incorporate them in the little one's menu....because you know!....most kids dont eat greens just like that. But if there's a chance to successfully hide them, then thats something it may work!
Caleb here, my little heart with blue eyes, is a cream soup lover. Hurrrrray! He usually accepts all cream soups, which is why I thought that this is my best chance to add the good stuff: fresh nettles and wild garlic.
Edible green wild foods 🍃🍃
I picked up the nettles and wild garlic myself. They grow hapilly on our land, a submountain area! This is like paradise! And I know that these are 100% bio, eco, organic, you name it. The nature here is abundant and the pollution is soo soo minimal.
Ingredients:
Wild garlic and nettles are the first ones to spring to enjoy.
Their vibrant green can only be associated with health and energy! 🍃💚
This is the list of ingredients, but you can adjust it on your needs or taste.
- stinging nettle tops
- wild garlic
- one piece of celery
- one parsnip
- a few potatoes
- one or two onions
- salt and pepper
- stock (vgetable or chicken stock) or you can simply use water
- one or two TBsp olive oil
- half and half cream (optional)
- bay leaf
- Italian seasoning
You can skip celery for example and add instead carrot. This is really a recipe you can play with and find your favorite combo of veggies for the soup. 🍵
Instructions
Step 1:
First, you need to blanch the nettles.
How you do that? Pretty simple.
Bring to a boil a large pot of water. Make sure to be enough for the quantity of nettles you have.
You can add some salt too.
In another bowl, add cold water and ice cubes.
Put the nettle tops in the boiling water for 2-3 minutes and then transfer them in the ice water bowl.
Not to mention that you need to wash the nettles.
Step 2: Cut your veggies in little cubes.
Step 3: Saute the veggies
Add olive oil in a pan and start to saute all veggies: onion, celery, parsnip, potatoes.
Add spices: bay leaf, salt, pepper, Italian seasoning.
Step 4:
It's time to add the stock or water and let it boil until the veggies are done.
Add nettle tops and wild garlic and boil for another 2-3 minutes.
Turn off the heat.
Use a vertical blender to make it smooth. Now its the time to add cream if you want.
We served it with grilled bread and some seeds.

Its just a regular cream soup, but its also full of nutrients, nourishin and have many health benefits for our body.
It is the perfect lunch or dinner for the whole family, dont you think?
