Georgie Porgie Pudding & Pie
Kissed the Girls and made them cry.
When the boys came out to play,
Georgie Porgie ran away.
Remember that old nursery rhyme from yesteryear?
Who does not enjoy a flaky pastry filled with a delicious steaming hot meat or veg filling?
Georgie Porgie surely was a pie lover but there are many theories as to who he really was; King George II, or George Wickham from Pride and Prejudice or was he the arsonist of the Great Fire of London which started in Pudding Lane and supposedly finished at Pye Corner. The Boys may be the firefighters and Georgie Porgie the arsonist running away at the prospect of the firefighters catching him at work.
No one can say for sure though who this rhyme was based on!
Back to the present, I can wrap hubby around my little finger at most times, but put a pie in front of him, and he will do the near impossible for me; he just cannot resist a pie;)
With everyone having to tighten the belt since the Coronavirus outbreak wreaked havoc not only with our health, but also our wealth, finding economical and comforting meals are more crucial than ever before.
Rustic Pepper Steak Pie with a featherlight homemade Pastry.
I always look for something quick and easy as I tend to dream most of the day away and ALWAYS start cooking late, but these individual pies were done in no time, plus I had enough filling over to make another pie with a runny pie topping, and popped it into the freezer for another day's meal.
If you're familiar with the phrase absent-minded professor you'll be able to picture a very dear ex boss of mine. He was a land surveyor and without fail would come into the office after a day in the field with a pie and Coke in his hand; and a trail of crumbs would tell where he had walked; used to drive the secretary dilly! Chris left this earth way too young but I always fondly remember him when I'm making pies.
The pastry recipe is exactly the same as the one I used for my German Apple Strudel made for Fruits & Veggies Monday, except this time I used frozen baking Margarine which yields a firmer pastry so the pies can be picked up by hand, so take a peak at that LINK.
FILLING
Sautee in a little oil:
- 1 Onion, diced
- 2 Leeks
- Couple of Celery Stalks
- Garlic
Add & brown meat: - 800 gram boneless Soft Beef Shin
Add beef or veg stock and cook slowly till meat is tender - I used my instant pot so added everything at once.
Add vegetables and cook till soft. - 2-3 Carrots, cubed
- 3-4 medium Potatoes, diced
Thicken with gravy powder and leave to cool. - Gravy powder (I use a mixture of brown onion soup powder & oxtail & veg soup powder for thickening and adding extra flavour)
- Fresh Mustard added before making pies
OK, I will let you in on a secret, the pie filling has to be made in advance and allowed to cool down otherwise you will have soggy pastry!
Roll pastry our fairly thin, cut into large circles.
Top with cold filling and seal with a second smaller pastry circle.
Brush with an eggwash & bake at 180°C for around 40 min.
There was still enough filling leftover for a second pie, so I popped it all into a casserole dish and made a runny pie topping which I have shared before, but here it is again; super easy and can be used to top virtually any filling.
POURABLE PIE TOPPING
Beat together:
- 1 Egg
- 125ml Milk
- 125ml Oil
- 200ml Cake Flour
- 10ml Baking Powder
- 2ml Salt
Pour over filling and bake for approx 30-40 min at 180°C.
