Once in a while it's time for baking home made bread. Here I show you how I made rye bread for my family today. This is no cooking recipe, it's rather a show to give you some impressions. Feel free to ask!
We use the whole grain simply because we prefer ist this way. For two pounds of rye I added 100 grams of one-grained wheat. I am very happy with this mill from #Osttirol (a region in #Austria).
To be honest: This time I didn't use these willow baskets. They are used for bigger loafs of bread and baked in a special oven. I didn't even heat the light blue wood stove in the kitchen.
And thi sold big dough trough stands here for decoration only. Maybe next time again...
I was not quite sure how what kinds of spice I should add this time because I tried a new variation. Besides yeast and salt, I added lots of #caraway and #anise and some #fennel seeds, ground #coriander and bread #clover. We bought some of the spices in Southern Tyrol, hence the Italian expressions on the labels. The following photos give you some impressions from the rural kitchen.
After a good rest in the warm room the dough needs to be formed or to be filled into forms. Using forms is the easier way and gues... that's was I chose!
Filled into forms, the dough needs another rest for at least half an hour. The room temperature of abput 24 degrees Celsius was a bit low, but it worked, the dough rose well.

Now I has some time left. I used the waiting period for preparing #bumpkin soup. However, making bumpkin soup would be another story! We are famous for our special bumpkin soup...
So, last steps - and last photos... The rye bread is in my beloved gas stove. The baking time is approximately one hour. A good time to relax, read Steemit posts and to enjoy a refreshing drink...
When the bread is taken from the oven, it needs to cool down. The forms are removed and the bread will be covered with table cloths in a cool room. Next morning we can cut the bread and enjoy it for breakfast. A part of the bread is meant for friends and one piece will be brought to granny.
