This recipe is extremely simple and inexpensive to make. It consists of an ice cream made only with frozen bananas that, thanks to its texture, does not need any kind of fat and because of its natural sweetness, does not need any additional sugar, so it’s basically a single ingredient recipe.
The flavor of this ice cream is delicious but I decided to add coconut to the recipe because at home we have a palm tree that gives us a coconut every week (it is always loaded with coconuts but we wait they fall alone) and this inspired me to participate in this contest, since the bananas were also harvested in my backyard, so the only ingredient I purchased was the dark chocolate bars and it is completely dispensable for this preparation.
Ingredients:
- Ripe bananas (the more ripe, the sweeter and the sweeter the better)
- A splash of water to mix
- Whole coconut
- Dark chocolate
Tools:
- Fridge
- Blender
Preparation:
- Peel the bananas
- Slice them
- Freeze them for at least 3 hours
- While the bananas are freezing, you can buy the chocolate
- Open the coconut to remove the flesh and cut it into small pieces
- Blend it with chocolate and the minimum amount of water possible
- Add the frozen banana previously soaked in water to the blender and mix until it gets smooth and completely homogeneous
- Freeze the mix for 1 hour
- Stir every hour to prevent crystallization and take it back to the fridge. Do this until the mix turns into the ice cream texture we all know.
Tips:
It is necessary to peel and cut the bananas before freezing them, don't even think about doing this with peels, I did it once and it was a disaster because it's impossible to peel and cut the banana while it's frozen and hard like a stone.
Blending with water makes the mixture not too cold and helps the blender work better but it needs to be as little as possible if you don’t want a smothie instead of an ice cream.
The quantities are completely arbitrary and the only proportion to be respected is that it contains more banana than coconut or chocolate. Whether it's 3:1 or 42:8, it's all about taste. If you want sweeter, increase the amount of banana, if you want more chocolate flavor, add more chocolate and so on. My quantities were 6 medium bananas (about 800 g), a quarter of a coconut which is about 150 g and a 50 g dark chocolate bar.
Coconut and chocolate add flavor, sweetness and fat to the mixture, that's a plus, but it's completely disposable if you don't have them or if you don't want to consume them. If you only have vanilla essence, for example, that's all you need.
Is it possible to make this recipe with alternative methods?
Well, I don't. Ice cream is a perversion of food, we could easily eat the bananas and coconut in their wild state, fresh or dehydrated but thanks to the fact that I have a freezing fridge, a blender, electrical power and and a perverted palate, this is possible. It will be time to think of another dish that can be made without these types of tools.
I learned this recipe from a very dear friend who was the obstetrician who deliver my baby. She is a woman over 60 years old who became a vegan since she was 18, she is one of the most upright and stubborn people I have ever met (besides my husband, ) so she has kept her diet without much torment. I admit that I have corrupted her preparation by adding chocolate which, in addition to being a stimulant of the nervous system, contains sugar and preservatives, all of these ingredients which she avoids all the time. But the craving was stronger.
