No Sunflower talk today as I have been cooking. Hubby usually does the cooking with me being in pain, I thought the next good day I have I will make lunch for hubby. I had bought the ingredients through the week but a sickness bug knocked me for a couple of days, I do feel better today, so instead of Sunday lunch we are having Roast Vegetables with Garlic and Cheese Bread.
I started with the Bread first as it needed a lot more work, I cheated buying a bread mix,, I had to do that to save me time and making the food easier. I followed the instructions on the pack letting it rest for 40 minutes to rise.
Whilst the bread was rising I started chopping the vegetables for the soup.
Ingredients
Peppers
Red Onions
Sweet Potatoes
Garlic Cloves
Tomatoes on the Vine
I ran some oil over a large cooking tray, chopped the Vegetables then ran a little more oil over the vegetables, I chopped the top of two garlic cloves placing the whole cloves on the tray. I seasoned the tray with Turmeric, Black Pepper Salt and a few pinch of chilli, I don't like my food to spicy, hubby would have liked a pinch more.
I placed the bread into the bottom oven placing the Vegetables into the top oven as they both cooked at different temperatures. They both should be cooked at the same time. I checked the Vegetables half way through cooking giving them a turn over. Whilst the food was cooking I made the Garlic oil for the bread.
Garlic Oil
Oil
Garlic Cloves
Butter
I added some oil to a cup then added 4 crushed Garlic cloves then a small chunk of Butter. I then mixed them all together ready for when the bread was cooked.
I let the garlic oil stand for a little while, this gave me time to add the Roasted Vegetables into my Soup maker, Once the Vegetables where in I added a cup for of V8 Vegetable Juice, squeezed the garlic out of the Cloves then turned the soup to smooth. The soup will take another 15 minutes.
I then started on the bread, taking it out of the oven, removing it from the loaf tray and placing it onto a flat tray, I then used a sharp knife to cut a sharp lines into the bread making squares. I then added the garlic oil pushing it into the bread then doing the same with some chopped cheese.
They were both ready to be served at the same time. I added the soup to a bowl then tore of some Garlic and Cheese Bread.
This is how it looked.
It was the perfect meal for Sunday, filling and tasted gorgeous, There was 2 empty bowls, hubby loved it and said he would definitely have it again. I sent My daughter a photo who asked if I could save her some for when she gets home tomorrow, I saved a little of both.
Thank you for visiting. 💟💟
