Less dishes, everything in one big party bowl, need I even say more?
This hack has been a game changer for me since I do not have a dish washer and I am queen of making a million dishes! Enter in the bowled meals!
Since these meals are in bowls, I keep wanting to refer to them as salads but they're actually great big meals in a bowl that feed two of us for basically the entire day so, I'd say they are pretty epic if you ask me!
I love playing with avocados for filling, healthy fats, and bringing in lots of nuts and seeds that I soak the night before (for optimum digestion) then gently bake with some seasoning on them to add a crunch!
These have been my go-to for the last couple months as I've drastically reduced my sugars and carbs and have implemented ALL OF THE SPINACH!
Like I always say, sub out what you don't have or don't like. I love spinach so it's what most of this bowl is. Spinach drenched in home-made dressing is an OK day by me!

What You Need:
Raw Ingredients
- 1 bunch spinach
- 2 avocado
- 1 beefeater tomato
- 1 cucumber
Sauteed Ingredients
- 1 eggplant
- 1 cup purple cabbage
- 1 bunch red spinach
- Stems from the spinach
- 1 bunch green onions
- 1 tbsp coconut aminos
- 1 tbsp veggie broth
- ½ tsp cumin
- ½ tsp paprika
- ½ tsp pink Himalayan sea salt
- ½ tsp onion powder
Dressing:
- 3 tbsp tahini
- 2 lemons
- 3 tbsp water
- ½ tsp pink Himalayan sea salt
- ½ tsp paprika
- ½ tsp onion powder
- ½ tsp cumin
Toppings:
- Sauerkraut
- Vegan cheeze
- Roasted pumpkin seeds, sesame seeds, sunflower seeds
What To Do:
- Chop up all of your raw ingredients and set them aside in a big bowl.
- Chop the eggplant and cabbage and toss it into a skillet with the veggie broth and spices on medium heat. Let this cook for a few minutes (aprox. 5 mins) and then add in the spinach and stems along with the green onions, turn down the heat to low and let simmer, covered. Once the eggplant is cooked through, let the mixture cool down a bit before adding into the raw ingredients.
- Mix all of the dressing ingredients into a bowl and add water as needed to get your desired consistency, then set aside.
- In a big bowl, mix all the raw ingredients and the sauteed food together and pour the dressing all over it!
- Top the bowl with your favorite toppings and enjoy!
