Omelet Curry//ডিমের পাতুরি//Dimer Paturi

I am not a very foodie person but I love food. It is another name for life, I too believe. So, being the beverage queen was not enough for me, so I turned into cooking. Yes, I am still young but this is the time for learning right? However, this was not my first attempt, I have tried cooking several times already, but this is my first attempt with Omelet Curry, so I am very excited to share it with you all.
This dish is one of my favorite dishes my father and he often cooks it when he is around. On Friday nights or Saturday nights, occasionally dad used to cook this Omelet Curry and the taste is a craving. I am not sure if I am biased but that is the scenario.
Serving: x2
Ingredients:
Eggs x2
Tomatoes x2
Small onions x2
Chilly x2
Salt x3 tablespoon
Black Pepper x1 teaspoon
Oil x3 tablespoon
Water x5 cups
Optional ingredients:
Half a Bottle Gourd cut in trapezium shapes
Onion and clover paste x2 teaspoon
Maggi masala magic (for noodles/taste) x1
Process pics and guide:
1. At first, we chop the onions and garlic into thin tiny long slices and heat the pan with oil on medium heat. Later we add the chopped onions and garlic to the pan while frying it for some time. After a good mix, when the mixture starts to turn brownish, we change the pressure to low heat.
2. Now, we add the chopped tomatoes with some water to let the tomatoes boil instead of getting fried. Approx, 2 tablespoons of water are added. We change the pressure to medium heat. The lid is closed and the curry is kept to boil for a good amount of time, approx, 2 minutes.
3. The chilies are cut, half-way-through, while the curry becomes dry and the tomatoes are no more in a solid shape. At this moment, onion and garlic paste is added so that the curry becomes thick and the smell too changes. We change the pressure back to low heat.
4. On another pan, we fry the egg with onion and salt, according to taste. I have also added Maggi masala magic in the egg for taste. While frying them, I rolled them on the pan itself and after they are cooked I cut each roll into three sections.
5. Finally, the fried eggs are added to the curry and cooked for a few minutes or so. The curry is tasted to check the salt amount and if needed more water is added; approx. 1 cup. Within 2 more minutes, the curry is ready to be served.
Tips:
If one is interested to add Bottle Gourd, they may, it tastes even better with Bottle Gourd. Also, the curry becomes thicker which is one of its specialties, it tastes better when it is thick.
