Efo riro is a local Nigerian soup that is mostly prepared by Yoruba people of Nigeria and it has a unique taste that will make you lick all your fingers. One secret ingredient of this soup is Iru/dawadawa/ogiri (fermented locust beans). It gives it a special aroma that once anyone enters your house they'd know something special is happening in the kitchen. Even though I don't like too much of it in my soups. It depends on individual preferences.
Although it is popularly known as Yoruba soup, it is now widely eaten across the country and all over the world. Well, it may be argued that the Yorubas are not the original "owners" of the soup but it is unarguably mostly cooked in Yoruba homes. This soup can be prepared with any type of vegetable of choice but the most popular one is spinach or water leaf (gure). This soup can be accompanied with pounded yam, amala, fufu, eba etc. It can also go with boiled yam, plantain, rice etc.
This is a soup you must try if you love healthy foods. The only ingredient that may be difficult to get for people outside Nigeria is Iru /dawadawa/ogiri (fermented locust beans) but you may check any African store around you for some. However, it may be the dried one because it may not be convenient shipping the fresh one due to the fact that it get spoilt easily.
Ingredients
- Spinach leaves
- Red peppers
- Onions
- Iru /dawadawa/ogiri (fermented locust beans)
- Meat
- Tripe, cow skin, liver (optional)
- Palm oil
- Seasoning cubes
- Salt
How to prepare
Carefully wash the vegetables and be sure there are no dirt in it
Slice into tiny bits and set aside
Wash and blend the pepper and onions. Set aside
- Cook the meat with seasonings and onions until it is tender. You can decide to fry or grill, if you wish.
- Pour out the meat with the stock in a bowl and set aside
- Wash the pot (or use another pot), place on medium heat, add palm oil afterwards
- Add onions and stir fry for about 60 seconds, add your iru and fry for another 10 seconds
Add the pepper and onion you have blended into the pot. Add seasoning and allow to cook for some minutes
Now add your meat into the pot and stir
After some minutes add the sliced vegetables and allow to simmer for about 3 minutes
Your soup is ready
