Today I come with Sabudana khichdi(tapioca pearls). Sabudana more commonly known as sago in the Asian countries. It is also known as Sago. It is made from the roots of the cassava plant.
Sabudana khichdi is a popular Hindu fasting food where soaked tapioca pearls are tempered with curry leaves, whole spices ,potatoes bell pepers, carrots and roasted peanuts.
Sabudana is high in carbohydrates, so it has the ability to boost the energy quickly. Due to its energy boosting it was classified as one of the best fasting foods by the Hindu community. But you can eat it anytime for a breakfast or light dinner.
My recipe will help you make the best sabudana khichdi that I non sticky, fluffy, and soft with no chewiness in the pearl.
How to make sabudana khichdi-:
- In a large bowl add 1 cup of sabudan. Rub them well with your fingers. Rinsing sabudana well a few times is the important step. This helps to get rid of the powdery Starch from the surface of the pearls. If you will not rinse it well then the pearls will stick up to each other an clump up.
2.Now soak them in water for to 8 hours . Depends on the quality of sabudana. Donot soak them in lot of water. To check you can press a few sabudana pearls in between your thumb and forefinger. If it is soft and get mashes easily it is well soaked. If it is hard it has to be soaked for a little longer. Here i soaked them for 5 hours and it's done.
Drain them completely.
3.Now chopped the vegetables like potato, carrots, capsicum, green chili etc.
4.In a pan heat oil and roast peanuts until crunchy.
5.Then add cumin seeds, curry leaves, chopped ginger and green chili. Saute it for 2 min.
6.Now add potatoes, carrots, capsicum and sprinkle rock or pink salt.
7.Saute it till the veggies are cooked. You can add grated coconut if you like to have it. Then add black pepper.
8.Now add the drained sabudana.
9.Mix everything well and saute for 3 mins on a high flame. The sabudana turns transparent. Turn off the flame.
10.Add som coriander leaves and squeeze some lemon juice. Gentle stir it with spoon.
11.Transfer it in a plate or serving bowl.
12.Serve it warm with yogurt. Your fluffy, non sticky sabudana khichdi I ready to eat.
