For our homemade Fried chicken, we used a no skin chicken every time. And to tenderize the chicken meat, we soak it in a yoghurt, fresh milk or in a buttermilk, (If you don’t have a buttermilk, simply add together a 1 cup of milk and a drop of lemon juice). In this recipe, I used low fat milk and soak the chicken pieces for 15 - 30 minutes.
I added various herbs in the final dip. You can use different herbs too depending on your taste and your mood. Use Rosemary herb in moderation as it may overpower the flavor of the dish.
Ingredients
Chicken, medium cut
Fresh milk, 1 - 1 ½ cup
Ginger, crushed, optional
All purpose flour, 1 cup
Panko Breadcrumbs
Dried oregano, 1 tsp
Dried thyme, 2 tsp
Rosemary, ½ tsp
Onion powder, 1 tsp
Garlic powder, 1 tsp
Salt, 1 tsp
Black pepper, ⅛ tsp
Soak the chicken pieces in fresh milk with crushed ginger for 15 - 30 minutes.
Heat a skillet in a medium heat and add enough oil.
Place the flour in a separate dish
In another dish, Add the dried ingredients into the Panko breadcrumbs and mix well to combine.
Take a piece of the chicken and dip it in the flour.
Then return it to the milk marinade.
Dip it lastly into the breadcrumbs mixture.
Fry in a skillet until golden brown, about 7 - 8 minutes on each side with an oil temperature of 375 degree fahrenheit.
Drain in a kitchen towel and serve warm.
It was delicious, juicy and crispy even the next day.
