Carrot sauce served with white rice is an exquisite , flavourful, and colorful dish,
Perfect for lunch or dinner
Best paired with a freshly squeezed juice and a delightful fruit like papaya on the side.
I had just put a big smile on my daughter's face by making this dish💝.
Not only was the carrot sauce flavorful but it was also enticing to the eyes,
I guess that's one of the reasons my daughter loves it so much.
Pairing the carrots with the sweet corn is just a perfect idea because the compliment each other so well and both of them made my white boiled rice enjoyable.
If am to rate this recipe, I would rate it 100/100 because it is awesome and perfect.
Ingredients needed

- 6 pieces of big carrots
- A handful of green beans
*1 tin of sweet corn - 1 medium sized onions
- 5 pieces of fresh red pepper
- 1 and half tablespoon of cornflour
- Mixed natural spices
- Salt to taste
*1/2 cup of groundnut oil - 1 cup of rice for serving
- enough water
How I prepared the sauce
This carrot sauce is not just nutritious but it is very easy to make, but it is less time consuming as well.
Within 10 minutes ,I was able to complete everything concerning the sauce preparation and started preparing the rice.
Below is a step by step procedure of how I made my carrot sauce...
Step 1

Firstly, I wash my carrot, green beans , pepper using a clean water and salt.
Then I went ahead to slice them.

After slicing my veggies, I placed a clean pot on the stove and allowed it to dry off water,
Then I added my half cup of groundnut oil and onions, I waited for a few seconds before adding my sliced Fresh red pepper, green beans and carrots,
I stirred it for some time before adding my sweet corn.
Step 3
After stirring for some time, I poured a little bit water and covered it for few seconds .
I dissolved my cornflour with a small amount of cold water
Steps 4
I poured my dissolved cornflour into the pot, this will thicken my carrot sauce ( remember not to overclock the carrots, so cook with time)
Step 5
The food is almost ready, I just have to add my salt and natural mixed spice to taste .
The sauce is ready just remaining the rice.
Preparing my white boiled rice
Everyone knows that preparing white rice is very easy,
I just had to wash the grains, then parboiled the rice , wash again and cook till tender.(Remember to add your salt).
After preparing my white rice, I added the remaining carrots and green beans from the sauce to make it look enticing to the eyes.

Carrot sauce is not just flavourful but also a beauty to behold,
The blended spice did a perfect job in elevating the taste.
The sweet corn complements the carrots and I couldn't get enough of it especially my daughter.
If I could make a particular dish regularly for a whole week , I will definitely prefer this wonderful carrot sauce.
