Almond Cookies
INGREDIENTS
two and three fourths cups sifted all-purpose flour
one cup white sugar
half teaspoon baking soda
half teaspoon salt1 cup lard1 egg
one teaspoon almond extract
forty eight almonds
PROCESS
Sift flour, sugar, baking soda and salt together into a bowl. Slice in the lard till mixture resembles cornmeal. Add egg and almond extract. Stir well.
Roll dough into one inch balls. Set them two inches apart on an ungreased cookie sheet. Place an almond on top of each cookie and press down to flatten slightly.
Bake in the preheated oven till the edges of the cookies are golden brown, fifteen to eighteen minutes.
