Nyala's Lentils
Ready In : 1 Hour and 40 minutes
Can make up to: 6 servings
INGREDIENTS:
three cups dried lentils
six cups water
one large anaheim chili, seeded and sliced
one small white onion, sliced fine
quarter cup butter
one tablespoon minced ginger
one tablespoon minced garlic
one tablespoon berbere, spice
one teaspoon black pepper
INSTRUCTIONS:
Boil the lentils in water for five minutes. Strain, reserving liquid.
In large sized pan, saute the anaheim pepper and onions in the butter till the onions are soft.
Put the lentils, six cups of the reserved liquid, and the remaining ingredients and bring to a simmer.
Cook, wrapped over M-L heat for seventy minutes, mixing from time to time to prevent sticking.
