Potato Salad
INGREDIENTS:
one lb waxy potato
one lb beet
half medium size red onion
one jalapeno
one lemon, juice of
one tablespoon olive oil
INSTRUCTIONS:
Rinse and boil the beets till soft, forty-five to sixty minutes depending on size. Rinse and boil the potatoes till sore, thirty to forty minutes depending on size. Coll both with cold water and slide the skins off. Cut beets and potatoes to quarter" thickness. Finely mince the jalapeno. Thinly chopped the red onion. Put all ingredients in a bowl and serve cooled.
