SWEET POTATOES
INGREDIENTS:
half onion, diced
three garlic cloves, minced
one teaspoon fresh ginger, minced
half small sweet potatoes or 1⁄2 small yam, diced
quarter red sweet bell pepper, diced
one teaspoon olive oil
two tablespoons lentils (split red)
one to two teaspoon tomato paste
one cup water
three fourth teaspoon paprika
half teaspoon ground coriander
quarter teaspoon ground allspice
quarter teaspoon ground cinnamon
quarter teaspoon ground fenugreek
quarter teaspoon ground ginger
salt or soy sauce
black pepper
INSTRUCTIONS:
saute the onion, garlic, ginger and yam in olive oil at medium heat till the onions are almost translucent. add the red bell pepper and saute for an additional minute. add the lentils, tomato paste and water. bring water to a boil. Put the paprika, coriander, allspice, fenugreek and ginger. lower heat slightly and allow the stew to simmer for twenty minutes or till the lentils are tender and all the water absorbed. add salt, soy sauce and black pepper as needed, and serve.
