Ingredients
quarter cup red wine vinegar
quarter cup mirin
quarter cup packed brown sugar
three teaspoons grated fresh ginger
quarter cup fresh lime juice
one large cucumber
quarter cup thinly sliced onion
Instructions:
In a mixing bowl, blend together the red wine vinegar, mirin, brown sugar, ginger and lime juice. Put the cucumber and onion, and stir gently to wrap. Chill for thirty minutes to mix flavors before serving.
