Ingredients (6 to 8 people)
- 4 Eggs
- 100 g of powdered sugar
- 300 g of mascarpone cheese or cream cheese
- 1 Pack of templates or biscuits biscuits (12 or 14)
- 3/4 cup of cold espresso coffee
- 2 Tbs. of rum or brandy
- 3 or 4 Tbs. of cocoa powder or fine grated black chocolate
- 1 pinch of salt
Preparation
Separate the yolks from the whites and place them in separate containers. Beat the egg yolks with the powdered sugar until a smooth and thick cream is obtained. Add to the previous cream the mascarpone cheese or cream cheese little by little.
Beat the egg whites to the point of snow or meringue with a pinch of salt. Unite the cream cheese with whipped egg whites.
Mix the rum or brandy with the coffee in another container and pass through this mixture the biscuits quickly, without getting too wet.
Place the biscuits in the bottom of a confectionery and, above, the cream of cheese.
Sprinkle the surface with cocoa powder or grated dark chocolate. Take to the refrigerator for 180 minutes.
